Richard (Richie) Cuocco oversees day-to-day operations and staffing for all foodservice operations of the Atlantic Shores Retirement Community - - a 100-acre campus in Virginia Beach, Virginia, containing a 50-bed skilled nursing facility, 53 apartment home assisted living facility, a 14-bed Memory Care unit, and over 400 independent living units, ranging from apartment homes to freestanding villa homes.
Chef Cuocco views his position as working for family at an upscale retirement community, which offers its 650 residents a fine dining experience in a country club ambiance. His Atlantic Shores recipes have recently won the “Chef’s Choice” and “People’s Choice” awards at the March of Dimes Signature Chef Auction event.
Originally from New York, Richie moved to Virginia Beach as a teenager, and began his career early in the kitchen at The Big Tomato in Virginia Beach.
His talents were honed working on a team under master chef Tom Colicchio (best known on the Bravo series “Top Chefs”), as well as working at the famous Gramercy Tavern in New York City.
His culinary creations have also delighted local diners at some of the region’s top restaurants – including Coastal Grill, The Lucky Star, and Mahi Mah’s.
Richie lives in Virginia Beach with his wife Jennifer, and cat Jaxx. When he’s not in the kitchen he likes to bike, run and swim – and has recently begun competing in marathons.

Dietary Manager/Harbourway
Laura Hofner serves as Dietary Manager of Harbourway - - a 53 apartment home assisted living facility and a 14-bed Memory Care unit, located within the 100-acre Atlantic Shores Retirement Community in Virginia Beach, Virginia.
In this position, Laura is responsible for many aspects of dining services, including planning menus and parties, staffing, and ensuring resident satisfaction. Guests at Harbourway benefit from her background in the nutrition and foodservice fields, and her personal pride in striving for the best possible customer service.
Prior to assuming her current position, Laura held a supervisory position in Atlantic Shore’s Seaside Health Center (skilled nursing care), where she computerized systems, trained staff, and developed social programs for the residents.
She also previously served on the dietetic staffs at Children’s Hospital of The King’s Daughters, and Westminster Canterbury on the Bay.
Laura has a Dietetic Technician degree from Tidewater Community College. The Navy brought her to the area when she was young, and she grew up in Chesapeake Beach.
She now resides in the Great Neck area with her husband Sandy and daughter Reagan. She also has two older stepchildren, Adam and Jamie, and two stray cats that seem to have made themselves at home.
